Square One Super Seed Cookies

What the heck are Super Seed cookies I hear you say? Well, these little nutrient packed super cookies are my go to midnight snack during my 2am Breastfeeds of the mini human. They are loaded with breastfeeding supporting foods, and so moorish. Sometimes I am so busy eating it at 2am that I even forget about the mini human attached to my boob. Remember, they are not just for breastfeeding mums. They tick all the boxes when it comes to nutrient dense real food, and thats what it's all about right?

KNOW YOUR NUTRIENTS

Where do I start! Magnesium - to help baby sleep longer and better, can be found in figs, banana, sunflower and pumpkin seeds, plus great for your own sleep and muscle recovery regardless! Vitamin E - found in pumpkin and butternut, prevents your baby from developing anemia, not to mention great for healing your skin (nipples!). Vitamin D, found in eggs is absolutely essential in helping bubs bones grow strong and support both of your immune systems.

Ingredients

  • 1/2 cup raw almond butter
  • 2 cups roast pureed pumpkin
  • 2 TBSP raw honey
  • 2 eggs 
  • 1/2 tsp. vanilla
  • 1/2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1/2 tsp. salt
  • 8 Figs or Dates chopped
  • 3/4 cup sunflower seeds
  • 3/4 cup pumpkin seeds
  • 1 cup desiccated coconut
  • 1 mashed banana

Method

Preheat oven to 180 degrees celcius. Combine all ingredients in a large bowl. Drop spoonfulls onto a greased or non stick baking tray. Bake for 12-15 minutes or until golden brown. Allow to cool. These cookies freeze really well and can be eaten straight from the freezer, or will keep for 10 days in the fridge in an airtight container.
