Square One Guilt Free Coconut and Banana Pudding

We all want and crave a little something sweet sometimes. This dairy and gluten free pudding is the perfect pudding to satisfy those cravings, while also adding some much needed essential nutrients and healthy fats.

Know your nutrients

You’ve probably learned by now that good fats don’t make you fat and that certain saturated fats are in the good fat category. The fat fact is that fats actually make you happy, and for some of us (especially those following a paleo diet) it's our main source of energy. Healthy sources of fat are also fantastic for your brain! The trick to finding a happy medium between eating too much and too little fat is to seek out whole, unprocessed food sources of healthy fats and eat them in moderation. Embrace healthy sources of fat.. it could in fact make you just that little bit smarter!


Ingredients

  • 4 egg yolks
  • 1/4 cup maple, honey or your chosen natural un refined sweetener
  • 1/4 cup arrowroot powder or gluten free cornflower
  • 2 ripe bananas, mashed
  • 1/2 tsp salt
  • 400ml full-fat coconut milk
  • 1 tsp vanilla extract

Base (optional)

  • 1 ripe banana, sliced
  • 1 cup brazil nuts 
  • 3 dates

Makes 4 Jars

Method

Prepare your base first. Simply blitz in a high speed blender your brazil nuts and dates. Mix till almost a butter consistency. Spoon the base into the bottom of 4 large glass jars. Slice one of your banana's and layer the slices over the nut base. Pop in the fridge to chill.

To make the pudding, whisk together the egg yolks, maple syrup, and arrowroot powder in a medium bowl. Set aside.

Heat the coconut milk in a small saucepan over medium heat, stirring occasionally till steaming but not boiling. 

Remove from heat and slowly pour the coconut milk into the egg mix, whisking constantly.

Transfer the entire mixture back into the saucepan and cook for another 5 minutes. Stir regularly until thickened, making sure it does not boil.

Transfer the mixture into a large bowl and whisk in the vanilla and the mashed bananas. Chill for one hour.

Spoon the mixture over the base in your glass jars and chill in the fridge. Top with sliced banana or your favourite fruit before serving if desired.
