Square One Raw Brazil Nut and Chocolate Cheesecake with Cacao Crust

I am really starting to nail these 'cheesecakes'. This time, I have developed a recipe that uses the amazing super nut - Brazil nuts! Oh and teamed it with Cacao - what more could a girl ask for?

Know your nutrients

Brazil nuts are jam packed with selenium, great for mens prostate health and also taste delicious. I use organic where possible as the flavour is enhanced and the nut is dreamy creamy. They are also loaded with healthy fats, some protein and a source of the anti again antioxidants. Age defying cheesecake I hear you say? Maybe.

Square One Raw Brazil Nut and Chocolate Cheesecake with Cacao Crust

  • 1 cup of dates
  • 1 cup of almonds, soaked and dried.

  • 2 cups soaked brazil nuts (soak overnight or for a minimum 5 hours)
  • 1/4 cup black currents
  • 1/3 cup melted coconut oil
  • 4 TBSP maple syrup (or Honey for a non vegan version)
  • Juice of half a fresh lemon juice
  • 1 and a half large bananas
  • 4 TBSP Cacao powder
  • 2 TSP Cinnamon
  • 1/4 cup Cacao nibs for crust

Gather all of your ingredients and make sure they are all at room temperature.

Add base ingredients into a food processor or high speed blender and pulse until mixture sticks together. Pour out into a cake time with removable sides and press into the cake tin. Pop in the fridge while you make the filling.

Place all filling ingredients into your processor or high speed blender and blend until smooth.

Pour on top of your base and smooth out with a spatula.

Using a tablespoon, spoon the cacao nibs around the outside edge of your cake.

Place in the freezer for 3-4 hours to set. Then pop in the refrigerator until you're ready to serve!

P.S. I would have taken more photos but it was cleaned up before I had a chance!
