Square One Cauliflower and Lentil Curry
- 1 head cauliflower
- 8 Cloves garlic
- 1 tbsp ginger
- 2 cups pre-soaked lentils
- 1 Onion
- 1/4 cup Square One yellow curry paste
- 3 cups vegetable stock
- 1/2 tsp curry powder (or to taste)
- 1 pinch salt
- 1/2 tsp turmeric (well, tablespoon in our case)
- 2 tsp coconut oil
- 1 small tin organic coconut cream
- Garnish with coriander
Sautee the onion, garlic, and ginger with the oil until soft, about 3 minutes. Add the curry paste, turmeric, and curry powder and stir fry for another 1 minute. Add the stock and water and whisk until incorporated. Bring to the boil.
Add the lentils and leave to simmer for 3 minutes. Leave the pot uncovered and stir occasionally. When almost done add the cauliflower. The cauliflower will cook within 5-7 minutes, so leave to simmer until cauli is tender-crip, add coconut cream with 3 minutes to go. Stir to combine, season with salt and top with coriander.
