This curry paste is amazing - we make it in batches and it keeps in the fridge for a few weeks. It is great with just about anything - meat, vegetables, seafood or noodles and you can even use it as a marinade or dressing - if you can handle it.

Turmeric is the base of many curries and it is undisputedly one of the worlds healthiest foods. We would rate it as the king of spices as it has numerous associated health benefits. It's even thought to protect against Alzhinmers Disease due to it's super inflammatory effects. Add to this the rest of the royal spices (cumin, coriander, cinnamon, garlic, ginger) and you really have a nutrient dense superfood base for any dish.
Square One Square One Yellow Curry Paste
- 1/2 to 1 stalk lemongrass, minced,
- 1-2 yellow chilies, sliced
- 2 shallots, sliced (or 1/3 cup chopped cooking onion)
- 1 thumb sized piece of ginger
- 4 cloves garlic
- 1 tsp. ground coriander
- 1 tsp. ground cumin
- 1/2 tsp. cumin seeds
- 1/4 tsp. cinnamon
- 3 Tbsp. wheat free, organic fish sauce
- 1/2 tsp. raw miso paste
- 3/4 tsp. turmeric
- 1/3 tsp. pepper
- 2 Tbsp. coconut sugar
- 1 Tbsp. lime juice
- 1 sun dried tomato
- 1/4 to 1/3 can coconut milk or water (just enough to keep the blender moving while preparing)
Add all ingredients to a blender, add water/coconut milk slowly till you reach a thick but smooth consistency. Use as a base for your curries, or as a marinade for chicken and seafood. Get creative!
