Did you know soybeans are full of iron, calcium, omega 3 fatty acids, no cholesterol, protein, B vitamins, calcium, magnesium - they are the only food with all 8 amino acids packed into them! They are also a fabulous source of soluble fibre which helps pick up and move out all of the unwanted waste and toxins in your digestive tract.


Square One Super Salad

  • 1 cup Organic Soy beans (simply soaked overnight in water)

  • 1 cup Mung beans
  • 4 organic carrots
  • 3 handfuls of chopped parsley
  • 1 lettuce head chopped
  • 1 cup Square One Hummus 
  • 2 courgettes
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds
  • Balsamic vinegar
  • Olive oil
  • coconut oil


Combine soy beans, chopped lettuce, pumpkin and sunflower seeds into a large bowl.

Slice courgettes lengthways to create thin strips of courgette, fry them in tea spoon of coconut oil on a fry pan or on BBQ. Add to salad.

Drizzle salad with Balsamic vinegar and extra virgin olive oil. Place sufficient amount of salad into serving bowls, add 2 tablespoons of our healthy hummus to the side of each bowl, 2 carrots, and a handful of parsley to each. Enjoy!

Serves 2/3 people as a main.
