Citrus Rice Power Bowl Salad

This salad is a complete antioxidant hit!

Know your nutrients

One cup of cooked wild rice can provide helpful amounts of B vitamins, minerals, dietary fibre, protein and complex carbohydrates. All B vitamins play various important roles in metabolising food and helping the body use the nutrients. 


  • 3/4 cup uncooked Black Wild Rice
  • 1 Large Carrot, julienned
  • 1 Red Pepper, julienned
  • 1 Raw Beetroot, julienned
  • 1/2 a Kumera, julienned
  • 1 handful of fresh basil
  • 1 handful parsley
  • 1/2 tsp lemon zest
  • 1/2 tsp lime zest
  • Sea Salt and Pepper
  • 1 Cup Rocket
  • 4 TBSP Apple Cider Vinegar
  • Handful of Pecans


Soak wild rice overnight in a bowl of cold water

The following day, drain and rinse. Add to a large bowl with all other ingredients and mix well.
